Dill Pickle Pasta Salad


In this creamy pasta salad recipe, dill pickles play
a starring role and add tons of flavour and crunch!
This recipe is even better when it's made ahead of
time, making it the perfect potluck dish.

Ingredients

Salad Dressing
3 Cups medium pasta shells 2/3 Cup mayonnaise
3/4 Cup sliced dill pickles 1/3 Cup sour cream
2/3 Cup diced cheddar cheese 4 Tablespoons dill pickle juice
2 Tablespoons chopped fresh/pickled dill Salt and pepper to taste
Optional: 3 Tablespoons minced white onion Optional: 1/8 teaspoon cayenne pepper

Instructions

  1. Boil pasta al dente, according to package directions. Run under cold water once finished to stop cooking process.
  2. Toss cold pasta with about 1/2 cup of pickle juice and set aside for about 5 minutes.
  3. Drain and discard pickle juice from pasta
  4. Combine all dressing ingredients in a small bowl and mix well.
  5. Toss all salad ingredients together in large bowl.
  6. Fold in dressing.
  7. Refrigerate at least 1 hour before serving
